Apple Scones

Ingredients (makes 8 scones)

  • 250g self-raising flour
  • 50g butter, cold and cubed
  • 2 tbsp brown sugar
  • 1 medium eating apple (like Pink Lady or Gala), peeled and grated
  • 1 egg, beaten
  • 100 ml low-fat milk (plus a little extra for brushing)
  • Pinch of salt

How to preprare

  1. Preheat oven to 200°C (180°C fan). Line a baking tray with parchment.
  2. Rub butter into the flour with your fingertips until it resembles breadcrumbs.
  3. Stir in the sugar and grated apple.
  4. Add beaten egg and milk gradually to form a soft dough (not too sticky).
  5. Turn onto a floured surface, gently pat to about 2cm thick, and cut into rounds.
  6. Place on the tray, brush tops lightly with milk.
  7. Bake for 12–15 minutes until risen and golden.

Note

Lovely eaten warm with a little butter. For fewer calories, skip the butter and serve with Glenisk Greek yoghurt on the side.
