Apple & Walnut Salad

Ingredients

  • 2 apples, thinly sliced
  • 80 g walnuts, toasted
  • 100 g mixed leaves
  • 40 g reduced-fat blue cheese (optional)
  • 2 tbsp olive oil
  • 2 tsp apple cider vinegar

How to preprare

  1. Toss apples, walnuts, and leaves.
  2. Drizzle with olive oil & vinegar.
  3. Add blue cheese if using.

Note

Leave out cheese for a lighter, vegan version.
