Asian Chicken Noodle Soup

Ingredients

  • 2 chicken breasts, cooked and shredded
  • 100 g rice noodles
  • 1 garlic clove, crushed
  • 1 chilli, chopped
  • 800 ml chicken stock
  • 2 pak choi, sliced

How to preprare

  1. Simmer the garlic, chilli, and chicken stock in a saucepan for 5 minutes.
  2. Add the rice noodles and pak choi, cooking until the noodles are tender.
  3. Stir in the shredded chicken and serve hot.

Note

A splash of soy sauce or lime juice gives it a lift.
