Avocado & Chickpea Salad

Ingredients

  • 2 avocados, diced
  • 400 g (1 can) chickpeas, rinsed and drained
  • ½ red onion, finely chopped
  • Juice of 1 lemon
  • 1 tbsp olive oil
  • Salt & pepper

How to preprare

  1. Gently toss all ingredients in a large bowl.
  2. Season to taste and serve immediately.

Note

Use half the avocado and boost chickpeas to reduce calories while keeping full.
