Avocado Toast With Grilled Tomato

80g ripe avocado

2 tsps fresh lemon juice

¼ tsp ground black pepper

¼ tsp sea salt

¼ tsp dried red chilli flakes

70g sourdough or wholegrain bread, sliced and toasted

60g ripe tomato, sliced and grilled

a sprinkle of fresh parsley, finely chopped (optional)

How To

Place the avocado, salt, pepper, lemon juice and chilli flakes in a bowl and mash well.

Spoon the mixture onto the toast.

Top with the sliced tomato.

Sprinkle the parsley over the top, if using. Serve.

Consume immediately.
