Banana Oat Breakfast Loaf

Ingredients (serves 8 slices)

  • 3 ripe bananas
  • 2 eggs
  • 200g oats (blitzed to flour)
  • 2 tbsp chia seeds
  • 2 tbsp almond butter
  • 2 tbsp honey
  • 1 tsp baking powder
  • 1 tsp olive oil (for tin)

How to preprare

  1. Heat oven to 180°C. Mash bananas,
  2. stir in eggs, oats, chia, almond butter, honey, and baking powder.
  3. Pour into loaf tin.
  4. Bake 35–40 mins.

Note

Gorgeous toasted with cottage cheese for extra protein.
