Beef & Guinness Casserole

Ingredients

  • 1kg stewing beef, cubed
  • 2 tbsp olive oil
  • 2 onions, chopped
  • 4 carrots, sliced
  • 4 garlic cloves, minced
  • 4 tbsp plain flour
  • 500ml Guinness
  • 600ml beef stock
  • 2 tsp dried thyme

How to preprare

  1. Brown beef in oil, remove.
  2. Sauté onion, carrot & garlic 6 mins.
  3. Stir in flour, then Guinness & stock.
  4. Return beef, add thyme. Cover, cook at 160°C for 2 hrs.
  5. Serve with mash or bread.

Note

Classic Irish dish — add parsnips for extra sweetness.
