Beetroot Soup

Ingredients

  • 3 cooked beetroots, diced
  • 1 potato, diced
  • 1 onion, chopped
  • 700 ml vegetable stock
  • 2 tbsp low-fat crème fraîche

How to preprare

  1. Simmer the beetroot, potato, onion, and vegetable stock until the vegetables are tender.
  2. Blitz until smooth.
  3. Stir in the crème fraîche and serve.

Note
