Mix chia seeds, almond milk, vanilla and sweetener in a bowl or jar.
Stir well, cover, and refrigerate at least 4 hours or overnight.
Stir again to break up clumps.
Layer pudding and berries in a serving glass, finishing with berries on top.
Chia seeds are rich in fibre and omega-3s, great for digestion and heart health. For fewer calories, skip the honey. If you want more protein, you can add a scoop of protein powder (+100kcal) — but I prefer to get my protein from food.
