Blueberry Breakfast Muffins

Ingredients

  • 8 eggs
  • 150ml semi-skimmed milk
  • 120g oats (blitzed to flour)
  • 150g blueberries
  • 1 tsp vanilla
  • Pinch salt
  • 1 tsp olive oil (for the tin)

How to preprare

  1. Heat oven to 180°C. Blitz oats to flour.
  2. Whisk eggs, milk, vanilla, salt; stir in oat flour and berries.
  3. Divide into 12 muffin holes; bake 16–18 mins. Serve 3 each.
