Blueberry Breakfast Muffins
Ingredients
8 eggs
150ml semi-skimmed milk
120g oats (blitzed to flour)
150g blueberries
1 tsp vanilla
Pinch salt
1 tsp olive oil (for the tin)
Serves: 4
Calories: 230 per serving (3 muffins)
How to preprare
Heat oven to 180°C. Blitz oats to flour.
Whisk eggs, milk, vanilla, salt; stir in oat flour and berries.
Divide into 12 muffin holes; bake 16–18 mins. Serve 3 each.
