Blueberry Oat Muffins

Ingredients (makes 8)

  • 200g oats (blitzed to flour)
  • 1 tsp baking powder
  • 2 eggs
  • 150g Greek yoghurt (low-fat)
  • 2 tbsp honey
  • 100g blueberries (fresh or frozen)

How to preprare

  1. Heat oven to 180°C.
  2. Mix oats, baking powder, eggs, yoghurt, and honey.
  3. Fold in blueberries. Spoon into muffin cases and bake 20 minutes.

Note

Freeze well; defrost overnight for a grab-and-go breakfast.
