Broccoli & Cheese Soup

Ingredients

  • 1 head broccoli, chopped
  • 1 potato, diced
  • 1 onion, chopped
  • 800 ml vegetable stock
  • 40 g reduced-fat blue cheese, crumbled

How to preprare

  1. Cook the broccoli, onion, and potato in the vegetable stock until soft.
  2. Blitz until smooth.
  3. Stir in the blue cheese and serve.

Note

Blue Cheese for light cheddar if you prefer.
