Burrito Wrap

Ingredients

  • 1 wholemeal wrap (BFree or Mission, ~60 g)
  • 120–150 g chicken breast, sliced
  • 50 g refried beans (Old El Paso or mashed kidney beans)
  • 60 g microwave rice (e.g. Ben’s Express)
  • ½ red pepper, sliced (about 5–6 strips)
  • ½ onion, sliced (about 5–6 strips)
  • 1 tsp fajita seasoning
  • 20 g reduced-fat cheddar, grated
  • 2 tsp low-fat sour cream (or Greek yoghurt)
  • 1 tsp olive oil

How to preprare

  1. Heat oil in a non-stick pan. Add chicken and cook 5–6 mins until golden and cooked through.
  2. Add peppers and onions, cook a further 3–4 mins until softened. Stir in fajita seasoning.
  3. Mix in refried beans and cook for 2 mins until warmed through.
  4. Microwave rice as per packet.
  5. Warm the wrap, then layer rice, chicken & bean mix, cheese, and sour cream.
  6. Roll tightly, slice in half, and serve.

Note

For a lighter option, swap rice for shredded lettuce (saves ~100 kcal), or replace sour cream with fresh salsa for extra flavour and fewer calories.
