Cauliflower & Cheese Soup
Ingredients
- 1 cauliflower, chopped
- 1 onion, chopped
- 1 potato, diced
- 900 ml vegetable stock
- 40 g reduced-fat cheddar, grated
How to preprare
- Simmer the cauliflower, onion, and potato in the vegetable stock until tender.
- Blitz until smooth.
- Stir in the grated cheddar and serve hot.
Note
Add mustard powder for extra flavour.
