Celeriac Soup

Ingredients

  • 1 celeriac, peeled and diced
  • 2 carrots, diced
  • 1 onion, chopped
  • 1 garlic clove, crushed
  • 800 ml vegetable stock

How to preprare

  1. Place the celeriac, carrots, onion, garlic, and vegetable stock in a saucepan.
  2. Bring to a boil, then simmer until the vegetables are tender.
  3. Blitz with a hand blender until smooth.
  4. Serve hot.

Note

Tastes amazing with a touch of nutmeg stirred in.
