Chicken & Cashew Nut Stir-Fry

Ingredients

  • 800g chicken breast, sliced (raw)
  • 2 tbsp olive or rapeseed oil (30ml)
  • 4 garlic cloves, minced
  • 4 carrots, julienned (≈300g)
  • 2 courgettes, sliced (≈400g)
  • 100–200g unsalted cashews (100g = lighter, 200g = richer)
  • 8 tbsp low-salt soy sauce (120ml)
  • 4 tbsp honey (80g)
  • 4 tsp sesame oil (20ml)

How to preprare

  1. Heat 1 tbsp oil in a wok. Stir-fry chicken for 5–6 minutes until cooked through, remove and set aside.
  2. Add remaining oil. Stir-fry carrots and courgettes for 4 minutes.
  3. Stir in cashews, soy sauce, honey, and sesame oil.
  4. Return chicken, toss well until coated and heated through. Serve hot.
  5. Calories – ~760 per serving (with 200g cashews)
  6. Calories – ~615 per serving (with 100g cashews)

Note

Cashews are calorie-dense. Drop to 100g if you want to save ~70 cals each.
