Chicken Chow Mein (Stir Fry Dinners)

Ingredients

  • 200 g dried egg noodles
  • 1 tsp vegetable oil
  • 3 chicken breasts, thinly sliced
  • 2 carrots, thinly sliced
  • 1 red pepper, thinly sliced
  • 1 onion, sliced
  • 2 garlic cloves, crushed
  • 60 ml soy sauce (low-salt if possible)
  • 1 tbsp oyster sauce
  • 1 tsp sugar (optional)
  • Spring onions or coriander, to garnish

How to preprare

  1. Cook noodles according to packet instructions;
  2. drain and set aside.
  3. Heat the oil in a wok or large frying pan over medium-high heat.
  4. Add chicken and cook for 5 minutes until golden.
  5. Add onion, garlic, carrots, and red pepper;
  6. stir-fry for 3–4 minutes until slightly softened.
  7. Stir in soy sauce, oyster sauce, and sugar if using.
  8. Toss in noodles and cook until everything is coated and hot.
  9. Serve topped with sliced spring onions or coriander.

Note

Swap half the noodles for extra veg like broccoli or cabbage to boost fibre and reduce calories.
