Chicken Chow Mein (Stir-Fry)

Ingredients

  • 300g dried egg noodles (uncooked)
  • 2 tbsp sesame oil (30ml)
  • 800g chicken breast strips (raw)
  • 4 onions, sliced (≈400g)
  • 4 carrots, julienned (≈300g)
  • 4 peppers, sliced (≈600g)
  • 300g bean sprouts
  • 8 garlic cloves, minced
  • 1 thumb-sized piece ginger, grated (≈20g)
  • 6 tbsp low-salt soy sauce (90ml)
  • 4 tbsp oyster sauce (60ml)

How to preprare

  1. Cook noodles according to packet instructions, drain, and toss with 1 tsp sesame oil.
  2. Heat remaining sesame oil in a wok. Stir-fr chicken until golden, remove and set aside.
  3. Add onions, carrots, peppers, and bean sprouts. Stir-fry for 4 minutes. Add garlic and ginger, cook 1 minute.
  4. Return chicken and noodles to the wok. Add soy sauce and oyster sauce. Toss well to combine and heat through.

Note

Swap half chicken for prawns for a lighter option.
