Chicken Orzo Bake

Ingredients

  • 2 chicken breasts (about 300g), diced
  • 250g orzo pasta
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 courgette, diced
  • 400g chopped tomatoes (1 tin)
  • 500ml chicken stock
  • 50g parmesan, grated
  • 2 tsp dried Italian herbs
  • Salt & pepper

How to preprare

  1. Heat oven to 200°C.
  2. Fry onion, garlic, and courgette in olive oil. Add chicken, cook 5 mins.
  3. Stir in orzo, tomatoes, stock, herbs, salt and pepper. Bring to simmer.
  4. Transfer to oven dish, bake 20 mins.
  5. Sprinkle with parmesan, bake another 5 mins. Serve bubbling hot.

Note

Orzo is the pasta that thinks it’s rice. Filling and fuss-free.
