Colcannon

Ingredients

  • 700g potatoes, peeled & chopped
  • 200g curly kale or cabbage, shredded
  • 3 spring onions, chopped
  • 2 tbsp milk
  • 1 tbsp butter
  • Salt & pepper

How to preprare

  1. Boil potatoes until tender. Mash with milk, butter, salt, and pepper.
  2. Steam kale/cabbage until soft, then stir into mash with spring onions.
  3. Serve hot as a side to any roast or grilled meat.

Note

Traditional Irish comfort food. Swap butter for olive oil or Greek yoghurt to reduce calories.
