Courgette & Parmesan Soup

Ingredients

  • 2 courgettes, diced
  • 1 potato, diced
  • 1 onion, chopped
  • 900 ml vegetable stock
  • 30 g Parmesan, grated

How to preprare

  1. Simmer the courgette, potato, and onion in the vegetable stock until tender.
  2. Blitz until smooth.
  3. Stir in the grated Parmesan and serve hot.

Note

Add fresh basil for a summery taste.
