Creamy Courgette & Mint Soup

Ingredients

  • 3 courgettes, diced
  • 1 onion, chopped
  • 1 garlic clove, crushed
  • 700 ml vegetable stock
  • A handful of fresh mint leaves
  • 2 tbsp 0% Greek yoghurt

How to preprare

  1. Cook the onion, garlic, and courgettes in a little oil until softened.
  2. Add the vegetable stock and simmer for 15 minutes.
  3. Blitz until smooth.
  4. Stir in the Greek yoghurt and fresh mint before serving.

Note

Swap yoghurt for light crème fraîche for a creamier taste.
