Crunchy Salmon Salad

Ingredients

  • A handful of mixed lettuce leaves
  • 50 g cucumber, chopped
  • 80 g red bell pepper, chopped
  • 5 cherry tomatoes, halved
  • 30 g shelled edamame beans
  • 60 g smoked salmon
  • 50 g ripe avocado, chopped
  • 5 g pine nuts
  • 5 g pumpkin seeds

For the dressing

  • ½ tbsp extra virgin olive oil
  • ½ tbsp white wine vinegar
  • ½ tsp dried oregano
  • ¼ tsp black pepper
  • Pinch of sea salt

How to preprare

  1. In a small bowl, whisk together all dressing ingredients.
  2. Add lettuce, cucumber, pepper, tomatoes, edamame, salmon, avocado, pine nuts, and pumpkin seeds to a serving bowl.
  3. Drizzle with the dressing and toss lightly.

Note

For extra protein and less fat, swap half the avocado for more edamame or a spoonful of light Greek yoghurt.
