Dark Chocolate Chia Pudding

Ingredients

  • 2 tbsps chia seeds
  • 240ml unsweetened almond milk (Alpro or Aldi)
  • 1 tbsp cocoa powder
  • 1 tbsp maple syrup (or sweetener)
  • ½ tsp vanilla extract
  • 1 tsp dark chocolate, grated
  • 1 tsp flaked almonds (optional topping)

How to preprare

  1. Mix chia, almond milk, cocoa, syrup and vanilla in a bowl. Whisk well.
  2. Rest 5 mins, whisk again to avoid clumps.
  3. Refrigerate at least 2 hours or overnight.
  4. Stir before serving and top with dark chocolate (and almonds if using).

Note

Rich in fibre and omega-3. For a lighter option, use sweetener instead of syrup. Add Skyr yoghurt on top for extra protein.
