Fragrant Fsh Kebabs

1 small red onion, chopped

25ml olive oil

1 tbsp fresh lemon juice

1 garlic clove, finely chopped

1 heaped tbsp fresh coriander, chopped

½ tsp sea salt

½ tsp ground black pepper

½ tsp paprika

½ tsp ground turmeric

½ tsp chilli powder

400g firm white fish fillets (e.g. haddock, monkfish), skinless, cut into large chunks

to serve:

wedges of lemon

How To

Pre-soak 4 wooden skewers in cold water, or prepare 4 metal skewers.

Place the ingredients in a large bowl and stir well to coat the fish in the marinade.

Allow to stand for 30 minutes.

Preheat grill to medium-high heat. Line the grill tray with foil.

Thread the fish onto skewers, discarding the marinade.

Place the fish kebabs onto the grill tray. Grill for 10 minutes, turning occasionally until cooked.

Serve with lemon wedges.

Consume immediately.

Serving suggestion: Serve with a mixed leaf and fresh dill salad.
