Honey Mustard Pork Chops with Green Beans

Ingredients

  • 4 lean pork chops
  • 2 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 400g baby potatoes, halved
  • 300g green beans, trimmed
  • 2 cloves garlic, minced
  • Salt & pepper

How to preprare

  1. Heat oven to 200°C. Roast potatoes with 1 tbsp olive oil, salt, and pepper for 25–30 mins.
  2. Mix honey and mustard. Brush onto pork chops.
  3. Pan-fry pork 3–4 mins each side until golden and cooked through.
  4. Steam or boil green beans with garlic until tender-crisp.
  5. Serve pork with beans and potatoes.
