In a Rush Chicken Curry

Ingredients

  • 130 g chicken breast, diced
  • ½ pack (125 g) microwave rice
  • 75 g frozen peas
  • 60 g onion, diced
  • 60 g carrot, diced
  • 45 g McDonnells Slimmers Curry Sauce Mix (made up as per pack instructions)
  • 1 tsp olive oil

How to preprare

  1. Heat olive oil in a non-stick pan. Add onion and carrot, cook 2–3 minutes until softened.
  2. Add chicken and cook until browned and cooked through.
  3. Prepare curry sauce according to packet instructions.
  4. Microwave rice as directed.
  5. Stir peas into the curry sauce and simmer 2 minutes.
  6. Combine chicken, sauce, veg, and rice. Serve hot.

Note

A proper Irish quick dinner. For a leaner option, use turkey breast instead of chicken. Add extra veg (courgette, peppers) to bulk it out without many extra calories.
