Minestrone Soup

Ingredients

  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery sticks, sliced
  • 2 courgettes, diced
  • 1 tin chopped tomatoes
  • 900 ml vegetable stock
  • 60 g pasta (small shapes work best)
  • 1 tin cannellini beans, drained and rinsed

How to preprare

  1. Add the onion, carrots, celery, courgettes, chopped tomatoes, and vegetable stock to a saucepan.
  2. Simmer for 10–15 minutes until the vegetables start to soften.
  3. Add the pasta and cook until tender.
  4. Stir in the cannellini beans and heat through.
  5. Season well and serve.

Note

Add parmesan shavings if calories allow.
