Nando’s Chicken

Ingredients

  • 130 g chicken breast, sliced
  • 1 clove garlic, minced
  • ½ red pepper, diced
  • 40 g Nando’s sauce (medium or hot, your choice)
  • 250 g sweet potato, peeled & cubed
  • 1 tsp butter (about 5 g)
  • Pinch of salt & black pepper

How to preprare

  1. Boil sweet potato cubes for 10–12 mins until tender. Drain well.
  2. Mash with butter, season with salt & pepper. (Swap butter for a splash of milk or Greek yoghurt for fewer calories.)
  3. Meanwhile, heat a non-stick pan with a spritz of oil or low-calorie spray. Add chicken, garlic, and red pepper, cook 6–7 mins until chicken is cooked through.
  4. Stir in Nando’s sauce and simmer 1–2 mins.
  5. Serve chicken & peppers over creamy sweet potato mash.

Note

Sweet potato mash makes this hearty and nutrient-rich. For a leaner twist, replace butter with milk or yoghurt, or serve with steamed broccoli instead of mash.
