Pork & Pineapple Stir-Fry
Ingredients
800g pork fillet, thinly sliced
2 tbsp olive oil (30ml)
4 garlic cloves, minced (≈12g)
2 red onions, sliced (≈200g)
2 red peppers, sliced (≈300g)
600g fresh pineapple chunks
12 tbsp low-salt soy sauce (≈180ml)
4 tbsp rice vinegar (≈60ml)
4 tbsp brown sugar (≈60g)
Serves: 4
Calories: 515 per serving
How to preprare
Heat 1 tbsp oil in a wok. Stir-fry pork for 4–5 minutes until browned, remove and set aside.
Add remaining oil, fry garlic, onion, and peppers for 3 minutes.
Stir in pineapple, soy sauce, vinegar, and sugar. Cook until bubbling.
Return pork to the pan, toss until glossy and coated. Serve hot with steamed rice.
