Pork & Pineapple Stir-Fry

Ingredients

  • 800g pork fillet, thinly sliced
  • 2 tbsp olive oil (30ml)
  • 4 garlic cloves, minced (≈12g)
  • 2 red onions, sliced (≈200g)
  • 2 red peppers, sliced (≈300g)
  • 600g fresh pineapple chunks
  • 12 tbsp low-salt soy sauce (≈180ml)
  • 4 tbsp rice vinegar (≈60ml)
  • 4 tbsp brown sugar (≈60g)

How to preprare

  1. Heat 1 tbsp oil in a wok. Stir-fry pork for 4–5 minutes until browned, remove and set aside.
  2. Add remaining oil, fry garlic, onion, and peppers for 3 minutes.
  3. Stir in pineapple, soy sauce, vinegar, and sugar. Cook until bubbling.
  4. Return pork to the pan, toss until glossy and coated. Serve hot with steamed rice.
