Protein Pancakes

Ingredients

  • 225g cottage cheese
  • 80g rolled oats
  • 5 eggs
  • 2 tsps cinnamon
  • 1 tbsp maple syrup
  • 2 tbsps coconut oil

How to preprare

  1. Blend all ingredients until smooth.
  2. Heat a little coconut oil in pan over medium-low.
  3. Add ¼ cup of batter per pancake.
  4. Cook 1–2 minutes until bubbles form, flip, and cook 1 more minute.
  5. Serve with toppings of choice.

Note

Cottage cheese is a great swap for protein powder — easier on digestion for many. For a lighter version, replace coconut oil with 1kcal spray. Add berries on top instead of syrup to keep sugar lower.
