Quinoa Avocado & Veggie Bowl

Ingredients

  • 90 g cooked quinoa
  • 60 g avocado, sliced
  • 75 g cherry tomatoes, halved
  • 75 g cucumber, diced
  • 75 g bell pepper, sliced
  • 30 g spinach or lettuce
  • 2 tbsp hummus
  • 1 tsp sesame seeds
  • Squeeze of lemon juice
  • Salt & black pepper

How to preprare

  1. Combine quinoa, avocado, tomatoes, cucumber, peppers, and spinach in a bowl.
  2. Top with hummus and sesame seeds.
  3. Squeeze over lemon juice, season, and toss lightly.

Note

A great veggie lunch. For fewer calories, halve the avocado or swap hummus for Greek yoghurt dip.
