Roast Chicken Dinner

Ingredients

  • 1 whole chicken (1.5 kg), skin removed before serving
  • 800 g Rooster potatoes, cut for roasting
  • 3 carrots, cut into batons
  • 1 parsnip, cut into batons
  • 1 head broccoli, cut into florets
  • 1 tbsp olive oil
  • Salt & pepper

How to preprare

  1. Preheat oven to 200 °C. Roast chicken for 1 hr 20 mins, basting occasionally.
  2. Roast potatoes, carrots, and parsnip with olive oil for 45 minutes.
  3. Steam broccoli for 5 minutes.
  4. Carve chicken and serve with roasted veg and spuds.
