Roast Chicken Dinner
Ingredients
1 whole chicken (1.5 kg), skin removed before serving
800 g Rooster potatoes, cut for roasting
3 carrots, cut into batons
1 parsnip, cut into batons
1 head broccoli, cut into florets
1 tbsp olive oil
Salt & pepper
Serves: 4
Calories: 845 per serving
How to preprare
Preheat oven to 200 °C. Roast chicken for 1 hr 20 mins, basting occasionally.
Roast potatoes, carrots, and parsnip with olive oil for 45 minutes.
Steam broccoli for 5 minutes.
Carve chicken and serve with roasted veg and spuds.
