Roast Pork with Apple Sauce

Ingredients

  • 1 kg pork loin (trimmed)
  • 800 g floury potatoes (Roosters), peeled for roasties
  • 2 carrots, sliced
  • 1 head Savoy cabbage
  • 2 apples, peeled and chopped
  • ½ tsp cinnamon
  • 1 tsp olive oil
  • Salt & black pepper

How to preprare

  1. Roast pork loin at 190 °C for 1 hr 15 mins. Rest before slicing.
  2. Roast potatoes and carrots with olive oil for 40 mins.
  3. Steam cabbage until tender.
  4. Simmer apples with a splash of water and cinnamon until soft – mash into a sauce.
  5. Serve pork with roast veg, cabbage and apple sauce.

Note

Apple sauce keeps it light and fresh – much better than heavy gravy.
