Salmon & Beetroot Salad

Ingredients

  • 200 g smoked salmon
  • 4 cooked beetroots, diced
  • 100 g baby spinach
  • 40 g goat’s cheese, crumbled
  • 2 tbsp olive oil
  • 2 tsp balsamic vinegar

How to preprare

  1. Lay spinach, beetroot, and salmon on plates.
  2. Scatter goat’s cheese.
  3. Drizzle with olive oil and balsamic.

Note

Swap goat’s cheese for feta if easier to find.
