Salmon Salad

Ingredients

  • Handful mixed lettuce leaves
  • 50 g cucumber, chopped
  • 80 g red bell pepper, chopped
  • 5 cherry tomatoes, halved
  • 30 g green peas or chickpeas
  • 60 g smoked salmon
  • 50 g ripe avocado, chopped
  • 5 g pine nuts
  • 5 g pumpkin seeds

For the dressing

  • ½ tbsp extra virgin olive oil
  • ½ tbsp white wine vinegar
  • ½ tsp dried oregano
  • ¼ tsp black pepper
  • ¼ tsp sea salt

How to preprare

  1. Mix dressing ingredients in a jug.
  2. Assemble salad in a bowl.
  3. Drizzle with dressing.
  4. Serve fresh, or refrigerate leftovers up to 2 days.

Note

Salmon is a fantastic source of protein and omega-3 fats that support heart and brain health. Avocado and pine nuts add healthy fats but can be calorie-dense — for a lighter version, cut the avocado portion in half or swap pine nuts for cucumber slices. Chickpeas make this dish more filling thanks to their fibre.
