Spinach & Pea Soup

Ingredients

  • 400 g frozen peas
  • 2 handfuls spinach
  • 1 onion, chopped
  • 700 ml vegetable stock
  • 2 tbsp Greek yoghurt

How to preprare

  1. Put the peas, spinach, onion, and vegetable stock in a saucepan.
  2. Bring to a boil, then simmer for 10 minutes.
  3. Blitz until smooth.
  4. Stir in the Greek yoghurt and serve.

Note

Add fresh mint if you want a fresher flavour.
