Tender Steak with Cranberry-Balsamic Sauce & Creamed Kale

Ingredients

  • 4 lean steaks (e.g. sirloin)
  • 1 tbsp olive oil
  • Salt & pepper
  • 150g cranberries (fresh or frozen)
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 200ml low-fat cream or milk
  • 200g kale, chopped

How to preprare

  1. Season steaks with salt and pepper. Sear in olive oil—2–3 min each side for medium. Rest while you finish the sauce.
  2. In the same pan, add cranberries, balsamic, and honey. Simmer until syrupy.
  3. In another pot, gently heat cream and stir in kale until tender and saucy.
  4. Serve steak drizzled with the cranberry-balsamic sauce and a side of creamed kale.

Note

Swap kale for spinach in winter for a softer texture.
