Tofu Breakfast Scramble

Ingredients

  • 100g firm tofu, crumbled
  • ½ tsp turmeric
  • 4 mushrooms, sliced
  • ¼ red pepper, diced
  • Handful baby spinach
  • ½ tsp olive oil
  • Salt & black pepper
  • 1 slice wholegrain toast (optional)

  • Calories – ~270 (without toast) / ~330 (with toast)
  • Protein – ~15g (without toast) / ~17g (with toast) | Fibre – 5g

How to preprare

  1. Heat olive oil in a pan. Add mushrooms and pepper, cook 3–4 mins.
  2. Add crumbled tofu, turmeric, salt and pepper. Stir well.
  3. Add spinach, cook until wilted.
  4. Serve on its own or with toast.
