Tofu Breakfast Scramble
Ingredients
100g firm tofu, crumbled
½ tsp turmeric
4 mushrooms, sliced
¼ red pepper, diced
Handful baby spinach
½ tsp olive oil
Salt & black pepper
1 slice wholegrain toast (optional)

How to preprare
Heat olive oil in a pan. Add mushrooms and pepper, cook 3–4 mins.
Add crumbled tofu, turmeric, salt and pepper. Stir well.
Add spinach, cook until wilted.
Serve on its own or with toast.
