Tomato & Basil Soup

Ingredients

  • 2 carrots, chopped
  • 2 × 400 g tins chopped tomatoes
  • ½ tin haricot beans, drained and rinsed
  • 1 onion, diced
  • 700 ml vegetable stock
  • 1 tbsp tomato purée
  • Pinch of sugar
  • Handful fresh basil leaves

How to preprare

  1. Add all the ingredients (except the basil) to a saucepan and simmer for 20 minutes.
  2. Blitz until smooth.
  3. Stir in the basil leaves before serving.

Note

Great in a flask. For protein, blend with a spoon of cottage cheese.
