Tuna & Bean Salad

Ingredients

  • 1 tin tuna in water (100g drained, e.g. John West)
  • 100g mixed beans (kidney, chickpeas, butter beans), rinsed
  • ½ red onion, finely chopped
  • Handful mixed leaves
  • 1 tsp olive oil
  • 1 tsp red wine vinegar

How to preprare

  1. Mix tuna, beans, onion and leaves in a bowl.
  2. Drizzle with olive oil and vinegar, toss and serve.

Note

A budget-friendly, protein-packed lunch. For lighter calories, swap beans for cucumber and tomato.
