Veggie Omelette with Toast

Ingredients

  • 2 eggs
  • Handful baby spinach
  • ¼ red pepper, diced
  • 3–4 mushrooms, sliced
  • 1 tsp olive oil
  • 1 slice wholegrain bread
  • Pinch salt & black pepper

How to preprare

  1. Whisk eggs with salt and pepper.
  2. Heat olive oil in a pan, sauté veg 3–4 mins.
  3. Pour eggs over veg, cook until set, folding once.
  4. Serve with toasted bread.

Note

A balanced breakfast. Add an extra egg white for more protein with fewer calories.
